Another week, another meal plan.
Remember how I said that we were participating in the Omega 3 Heart Challenge? This past week was a little more successful, I’m happy to say. I managed to get them to eat the tuna flan (recipe coming) and the home-made fish and chips.
Bill makes a mean fish and chips.
This week will probably look like:
Monday – Tacos
Tuesday – Tuna Patties and salad
Wednesday – Spinach and Potato Frittata (recipe below)
Thursday – Honey Bangers and Mash
Friday – Home-made Pizzas
Saturday – BBQ
Sunday – DIY Toasties
What’s on your meal plan this week?

Spinach and Potato Frittata {serves 4}
You will need:
- 1 medium onion, finely chopped
- 500g potatoes, peeled and diced
- 6 x eggs, lightly beaten
- 25g baby spinach leaves
- 1 cup grated cheese
- Heat a little oil in a fry pan. Add onion and potato and saute over low heat for approx 10 minutes, until potato is tender. Transfer potatoes into a mixing bowl.
- Lightly beat eggs with a tablespoon of water, add salt and pepper (optional) and add eggs to mixing bowl.
- Add cheese and spinach leaves to mixing bowl and gently combine it all.
- Pour mixture into a small deep baking dish and bake in the oven for approx 40 minutes at 160 degrees C.
- Divide into four pieces and serve with salad.

Hmm..remind me never to read your Meal Plans too early in the morning when all I’ve had for breakfast is a piece of toast. :s You’re making me salivate! The fritata looks really good and easy to make too. Might try making that but substituting the spinach with diced tomatoes….yummm…
