Recently Samelia’s Mum shared her recipe for Mexican Inspired Layered Dip and asked what is your favourite dip or dish to make for Summer get togethers.
That layered dip is one of my favourites too.
And then I thought of Spinach Cob Loaf Dip. It is the noms!
So I am sharing how we make it…
Spinach Cob Loaf Dip
You’ll need:
- cob loaf
- 2 x 250g packets of frozen spinach, thawed
- 1 cup mayonnaise
- 1 cup sour cream
- 1 x packet of spring vegetable dry soup mix (not one with dry noodles in it – don’t ask!)
- 3 x spring onions, chopped
- 1 baguette
To make it, you:
- Hollow out the cob loaf and cut the bread (and baguette) into bite size pieces
- In a bowl, combine the spinach, mayonnaise, sour cream, dry soup mix and chopped spring onions and mix thoroughly
- Pour the mixture into the hollow cob loaf
- Stand back and watch the whole thing get devoured
The funny thing with this is that some of my children swear that they HATE spinach and yet they will practically inhale this dip.
Definitely a must-have at our Summer BBQs.

I make this one too, and it is definitely a hit! My version uses cream cheese instead of mayo and there’s small can of sliced water chestnuts added for that extra crunch. It works well to make it hours before serving so that the flavours meld and any chunks of veg in the soup mix have a chance to soften.
My mouth is watering for this dip now. It’s been ages since I made it. Thanks for the reminder!

Ooh, the chestnuts would make a yum addition! And you’re right, leaving it for a few hours would help but people are impatient here
I have to back away from the cob, otherwise I will eat the lot! Love the warm ones too. Have only ever made them once or twice myself, but am quick to get stuck into everyone else’s!
I haven’t made the warm ones but I have certainly eaten them

I LOVE that the bowl gets eaten too. Heh.
My mother in law makes this in summer when we have bbq’s. She uses crean cheese too. Again-I too have too back away from it otherwise it will all be gone!
It definitely is addictive!
Oh yum. That stuff is the best. I actually use french onion soup mix which is so delicious. Now I want some.
